Depending how fast those got to market they could easily be non ripe bananas, they pick them before they are fully ripe to allow for ripening during transportation.

I actually get spicy plantain chips from Walmart. Not really keto but I only eat a few a day for a salty spicy treat and to remind myself of potato chips.

If you eat a lot of rice, seriously consider a rice cooker. Even a cheap one makes consistency easy. I can’t help with the eggs though, sorry.

Going to comment just to also recommend a cheap rice cooker. Bought one for under 20 euros, perfect rice every time. Keeps it warm too. You can use it for other stuff too.
